NO BAKE – Cream Cheese, Coconut, Snowball’s

Pineapple Cream Cheese Balls Rolled in Coconut

Ingredients:

  • 1 package (8 ounces) cream cheese, softened
  • 1 can (8 ounces) crushed pineapple, well drained
  • 1 cup chopped pecans
  • 3 cups flaked coconut

Instructions:

  1. In a small bowl, beat together the softened cream cheese and crushed pineapple until thoroughly combined.
  2. Fold in the chopped pecans. Cover the mixture and refrigerate it for at least 1 hour to firm up.
  3. Remove the chilled mixture from the refrigerator. Scoop out small portions and roll them into 1-inch balls using your hands.
  4. Pour the flaked coconut into a shallow dish. Roll each ball in the coconut until fully coated, pressing gently to adhere the coconut.
  5. Place the coconut-covered balls onto a plate or baking sheet. Refrigerate them for at least 4 hours or overnight to set.
