CARROT CAKE RECIPE THAT INCLUDES PINEAPPLE

Carrot Cake Recipe with Pineapple 🥕🍍

INGREDIENTS:

  • 4 cups grated carrots
  • 1 cup raisins
  • 2 eggs
  • 1 cup white sugar
  • 1 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 1 cup chopped walnuts

PROCEDURE:

  1. Prepare the Carrot Mixture:
    • Combine grated carrots and raisins in a medium bowl. Set aside for 15-20 minutes.
  2. Preheat and Prepare Oven:
    • Preheat the oven to 160°C (325°F).
    • Grease a baking pan.
  3. Mix Wet Ingredients:
    • In a large mixing bowl, combine sugar, vegetable oil, eggs, and vanilla extract.
    • Stir in the crushed pineapple.
  4. Combine Dry Ingredients:
    • In another bowl, sift together the all-purpose flour, baking soda, salt, and ground cinnamon.
    • Gradually add the dry mixture into the carrot mixture, blending well.
    • Fold in the soaked grated carrots, raisins, and chopped walnuts. Stir until evenly combined.

    • Pour the batter into the greased baking pan.
    • Bake in the preheated oven for 45 to 55 minutes or until a toothpick inserted into the center comes out clean.
  2. Cool and Serve:
    • Once baked, remove the cake from the oven and allow it to cool in the pan for about 10-15 minutes.
    • Transfer the cake to a wire rack to cool completely.
