For The Batter:
- 1 cup softened butter
- 2 cups sugar
- 2 eggs
- 2 cups buttermilk or homemade buttermilk (2 cups milk + 2 tablespoons vinegar or lemon juice)
- 4 cups flour
- 2 teaspoons baking soda
For The Cinnamon/Sugar Mixture:
- 2/3 cup sugar
- 2 teaspoons cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Grease two loaf pans.
- In a mixing bowl, cream together the butter, 2 cups of sugar, and eggs until well combined. Add buttermilk, flour, and baking soda. Mix until a smooth batter forms.
- Pour half of the batter (approximately 1/4 in each pan) into the greased loaf pans.
- In a separate bowl, combine 2/3 cup sugar with cinnamon to create the cinnamon/sugar mixture.
- Sprinkle 3/4 of the cinnamon mixture over the batter in the loaf pans. Add the remaining batter on top, then sprinkle with the rest of the cinnamon topping. Use a knife to swirl the layers gently.
- Bake for 45-50 minutes or until a toothpick inserted into the center of the loaves comes out clean.
