Snowball recipe

The conventional recipe for genuine Scottish snowballs. Flavorful rolls loaded down with jam and covered with coconut icing.

We have a couple of recipes that Granny chose to impart here at Baking to Granny (and some I continue to bother her to give me as well!). Something she needed to adjust, modernize and consummate before she shared it was…the Scottish snowballs.

Presently, when grandmother began enlightening me regarding snowballs, I was persuaded she was discussing chocolate-coconut-marshmallow-covered snowballs made by Tunnocks. Also, she’s astonishing all alone, can we just be real! However, no, Grandmother was discussing her snowball cakes that she made at the pastry shop a while back.

Scottish snowballs are something else entirely, and they’re similarly as heavenly. One that Grandmother recollects affectionately, the two of which were made at the pastry kitchen and have seen numerous clients appreciate them, as well. Furthermore, when she shared a review of it on Instagram, I was shocked and happy to perceive the number of individuals that understood what they endlessly were calmly holding back to post this recipe!

 

*ingredients:

 

°250 grams of flour

 

°100 grams of sugar

 

°1 large egg

 

°0.5 sachets of baking powder

 

°5cl oil

 

°100 grams of apricot jam

°100 grams of grated coconut
