Skillet Chicken and Mushroom Wine Sauce

Ingredients:

  • 3 boneless, skinless chicken breasts (sliced diagonally into cutlets)
  • ½ cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 12 ounces mushrooms (thickly sliced and cleaned)
  • 4 tablespoons unsalted butter (divided)
  • 1 tablespoon olive oil
  • 2 garlic cloves (minced)
  • 2 large shallots (thinly sliced)
  • 1 ½ cups low-sodium chicken broth
  • ½ cup dry white wine
  • ½ cup heavy cream
  • 2 large sprigs of fresh thyme
  • 1 teaspoon Dijon mustard
  • 2 teaspoons cornstarch dissolved in 2 tablespoons water or broth

Instructions:

  1. Pat dry the chicken breasts with paper towels. Cut each breast diagonally into thinner
  2. cutlets. Alternatively, place the chicken breasts between plastic wrap and gently pound to an even thickness.
  3. In a shallow bowl, combine the flour, salt, pepper, and garlic powder. Set aside.
  4. In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat until the butter melts. Dredge 3 chicken cutlets in the flour mixture, ensuring both sides are coated, and shake off the excess. Cook the coated chicken in the skillet until lightly browned, approximately 5 minutes on each side. Transfer the cooked chicken to a plate, cover to keep warm, and repeat the process until all chicken is browned.
  1. Add the sliced shallots to the skillet and cook until they soften and begin to brown. Add the minced garlic and sauté for about 30 seconds until fragrant. Pour the wine into the pan, scraping the bottom to deglaze. Add the thyme sprigs, chicken broth, mustard, and cream. Bring the mixture to a boil and let it cook for 5 minutes. Stir in the dissolved cornstarch. Return the sauce to a gentle simmer, add the chicken back to the skillet, and simmer for 5 minutes until the sauce thickens and the chicken is heated through. Remove the thyme sprigs, and season the dish with salt and pepper according to taste.
  2. Garnish with parsley or additional thyme and serve the dish with rice, potatoes, or noodles.
