*Ingredients:
°2 tsp virgin olive oil
°1 medium onion, cut into cubes
°2-3 cloves minced garlic
°1 pound of lean beef
°1½ cups cooked brown rice
°1 14.5 ounces diced tomatoes
°1 tablespoon tomato paste
°1 teaspoon dried oregano
°1 tablespoon smoked paprika
°Salt and black pepper to taste
°7 large sweet peppers were removed from the top and core
°1 c jack cheddar cheese
°Fresh chop parsley for garnish

Preheat the oven to 375 degrees Fahrenheit and place the chopped bell peppers side by side on a beveled baking dish or tray.
Heat the oil in a large skillet over medium heat. Fry onions until softened, then add garlic and cook for another minute.
Add the minced meat and cook until the pink color fades, chopping the meat with a wooden spoon for 5-6 minutes. Add the cooked brown rice, diced tomatoes, tomato paste, thyme and smoked paprika.
Cook to sauce has reduced slightly, for 4-5 min. Taste and season with salt and pepper as needed.
Stuff each pepper with the beef mixture and bake until the peppers are mostly cooked. About 10-12 minutes.
Sprinkle with cheese and bake for another 5-7 minutes. Garnish with fresh chopped parsley before serving.
