Tomato Bruschetta with Balsamic Glaze

Preparation:

  1. Prepare the Tomato Topping:
    • In a medium-sized mixing bowl, combine the chopped tomatoes, red onion, minced garlic, basil leaves, extra-virgin olive oil, salt, and ground black pepper. Mix thoroughly and chill in the refrigerator for at least an hour to enhance flavors.
  2. Make the Balsamic Glaze:
    • Heat a small cooking pot or shallow saucepan over medium heat. Add the balsamic vinegar and cook for 4-5 minutes or until the sauce reduces by half. Transfer the glaze to a small bowl and let it cool; it will continue to thicken as it cools.
  3. Toast the Bread:
    • Preheat the oven to 350°F (175°C).
    • In a small mixing dish, combine the olive oil and powdered garlic. Apply this mixture to one side of each baguette slice.
    • Arrange the slices on a baking sheet and toast in the preheated oven for about 10 minutes or until they turn light golden brown.
  1. Assemble the Bruschetta:
    • Place a spoonful of the prepared tomato mixture on top of each toasted baguette slice.
    • Drizzle the cooled balsamic glaze over the tomato-topped slices.
    • Serve immediately and enjoy!
