Best Ever Pepper Steak
Ingredients:
- 1/4 cup low-sodium soy sauce
- 2 tablespoons rice wine vinegar
- 4 teaspoons packed brown sugar
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil, divided
- Kosher salt
- Freshly ground black pepper
- 1 pound flank steak, thinly sliced against the grain
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon freshly minced ginger
- Cooked white rice, for serving
Directions:
- Prepare the Sauce: In a medium bowl, whisk together the soy sauce, rice wine vinegar, brown sugar, and cornstarch. Set the sauce aside.
- Cook the Steak: In a large skillet over high heat, heat 1 tablespoon of oil. Add the thinly sliced flank steak to the skillet, season with salt and pepper, and cook until it’s cooked through and seared on all sides, approximately 8 minutes. Once done, transfer the cooked steak to a plate.
- Prepare the Vegetables: In the same skillet, add the remaining 1 tablespoon of oil, red and green bell peppers. Cook the peppers until they’re softened, about 4 minutes. Stir in the minced garlic and ginger, cooking until fragrant.
- Combine and Cook: Return the cooked beef to the skillet. Pour the prepared sauce over the mixture. Stir and cook, allowing the sauce to thicken and coat the beef and peppers evenly, about 2 minutes more. The sauce should become glossy.
- Serve: Serve the delicious pepper steak over cooked white rice.
