Spaghetti

Ingredients:

  • 300g to 500g pasta (quantity as desired)
  • Salt
  • Water

For the Cherry Tomato Sauce:

  • 600g cherry tomatoes
  • 4 teaspoons olive oil (high quality)
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon sugar (optional)
  • Fresh basil leaves, a few, as desired

For Serving:

  • Grated Parmesan cheese (optional)

Directions:

Cooking the Pasta:

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Remember to reserve 1 cup (250 ml) of pasta water before draining.

Preparing the Cherry Tomato Sauce:

  1. Heat olive oil in a large saucepan or skillet over medium heat.
  2. Add the cherry tomatoes, minced garlic, salt, pepper, and sugar (if using). Cook for about 5-7 minutes, stirring occasionally. As the tomatoes cook, some will start to burst. Use a fork to slightly mash the tomatoes, allowing their juices to release.
  3. Remove the saucepan from heat. Add the fresh basil leaves. Taste and adjust the seasoning if needed.

Assembling and Serving:

  1. Add the drained pasta into the saucepan with the cherry tomato sauce. Toss the pasta and sauce together. If the sauce is too thick, add some of the reserved pasta water gradually to reach the desired consistency.
  2. Divide the cherry tomato pasta into 4 bowls.
  3. Optionally, sprinkle grated Parmesan cheese on top.
  4. Serve and enjoy your delicious cherry tomato pasta!
