- 2 beef ribs, approximately 800g each
- 2 sprigs of thyme
- 2 sprigs of rosemary
- 6-8 teaspoons of olive oil
- 1 teaspoon white pepper
- Flaky sea salt (such as fleur de sel)
Preparation:
- Begin by crushing the white pepper. Peel the leaves from the thyme and rosemary sprigs. Finely chop half of the rosemary.
- Place the beef ribs in a deep dish or bowl. Sprinkle the ribs with the prepared thyme, rosemary (chopped), and crushed white pepper.
- Drizzle the olive oil over the ribs, ensuring they are evenly coated with the herbs and oil. Allow the ribs to marinate in this seasoning mixture for approximately 30 minutes.
Grilling Instructions:
- While the ribs are marinating, start preparing your barbecue. Light the barbecue and allow the embers to heat up.
- Once the embers are ready and glowing, place the seasoned beef ribs onto the grill. Position the grill about 8 cm (approximately 3 inches) above the embers.
- Grill the ribs for about 7 minutes on each side for rare doneness. Adjust the cooking time as needed: increase it for medium doneness or cook longer for well-done ribs.
- Keep an eye on the ribs and ensure they cook to your desired level of doneness.
Once done, remove the grilled ribs from the barbecue and allow them to rest for a few minutes before serving. Sprinkle with flaky sea salt, if desired, to enhance the flavors. Enjoy your beautifully grilled prime rib!
