HAWAIIAN CHEESECAKE BARS!!!

Ingredients:

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened

For the Cheesecake Layer:

  • 16 ounces cream cheese, softened
  • 4 tablespoons granulated sugar
  • 4 tablespoons milk
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 16 ounces crushed pineapple, drained

For the Coconut Topping:

  • 2 cups flaked coconut
  • 2 tablespoons melted butter

Directions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine the flour, 1 cup sugar, and softened butter. Mix until the dough comes together.
  3. Press the dough evenly into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, beat the cream cheese with an electric mixer until smooth.
  5. Add 4 tablespoons of sugar, milk, eggs, and vanilla extract to the cream cheese. Beat until well combined and smooth.
  6. Gently fold in the drained crushed pineapple into the cream cheese mixture.
  7. Spread the cream cheese and pineapple mixture evenly over the crust in the baking dish.
  8. In a separate bowl, mix the flaked coconut with 2 tablespoons of melted butter.
  9. Sprinkle the coconut mixture evenly over the cream cheese layer.
  10. Bake in the preheated oven for about 25-30 minutes or until the edges are lightly golden and the center is set.
  1. Allow the bars to cool completely in the pan on a wire rack.
  2. Once cooled, refrigerate the bars for a few hours or overnight to set.
  3. Cut into squares and serve chilled.
