Hawaiian Chicken

 

Ingredients:

 

– ¾ cup of unsweetened pineapple juice

– ½ cup of brown sugar

– ¼ cup of water

– 2 tablespoons of low-sodium soy sauce

– 2 teaspoons of freshly minced garlic

– 2 teaspoons of minced ginger

– ½ teaspoon of salt

– ¼ teaspoon of red chili flakes (to add some heat without making it too spicy)

– 2 lbs of boneless, skinless chicken breasts

 

Directions:

 

1. Prepare the Marinade:

– Whisk together all the marinade ingredients (from pineapple juice to red chili flakes). Set aside ½ cup of the marinade.

 

2. Marinate the Chicken:

– Place the chicken in a zip-top bag or a container that is slightly larger than the amount of chicken (to ensure proper coverage by the marinade).

– Pour the remaining marinade over the chicken, making sure it coats all sides. Seal the bag or container and turn it to ensure even coating.

– Allow the chicken to marinate for at least 30 minutes, up to a maximum of 2 hours.
