**Ingredients:**

 

– 8 ounces (250 g) of bacon, sliced into strips

 

– 2 tablespoons of butter

 

– 26 ounces (750 g) of brown mushrooms, washed and pat dried with a paper towel

 

– 1 tablespoon of olive oil

 

– 1/4 cup of dry white wine (or chicken broth/stock)

 

– 6 cloves of garlic, finely chopped

 

– 1 1/2 cups (400 ml) of heavy cream (you can also use thickened cream or evaporated milk)

 

– 1 tablespoon of fresh parsley, chopped

 

– 1 teaspoon of fresh thyme, chopped

 

– Salt and pepper to taste

 

– 1/2 cup of fresh shredded or grated mozzarella cheese

 

– 1/4 cup of fresh shredded or grated parmesan cheese
