Herb Chicken Meatballs
25 minutes to prepare serves 5-6
INGREDIENTS
1 pound ground chicken
1 large egg, beaten
1/2 cup seasoned breadcrumbs
1/4 cup Parmesan cheese, grated
1/2 small yellow onion, finely chopped
3 medium garlic cloves, minced
1/4 cup fresh parsley, chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/8 teaspoon ground nutmeg
1/4 teaspoon dried rosemary
1/4 teaspoon kosher salt
1/4 teaspoon ground pepper
1 tablespoon olive oil
PREPARATION
Combine all ingredients except olive oil in large bowl. Mix until well incorporated. Form mixture into 1-inch meatballs.
Heat olive oil in large skillet over medium heat. Fry meatballs 10-12 minutes, rotating sides for even cooking
Transfer meatballs to serving dish and enjoy with a favorite sauce on the side.
