*Ingredients :
°2 teaspoons olive oil
°Salt and pepper to taste
°1 pound minced beef I use 90�t-free
°1 finely cut onion
°2 teaspoons chopped garlic
°4 cups coiled green, coarse chopped
°2 islands, peeled, cut into quarters and sliced
°4 cups beef broth
°3 8 ounces tomato sauce
°1/2 cup long grain rice uncooked
°3 tbsp brown sugar
° tablespoons parsley
*Instructions
- Heat olive oil in saucepan on medium-high heat. Add the mince and season with salt and pepper to taste.
- Cook the meat with a spoon until the beef is browned, about 4-5 minutes. Add onion and garlic to cook for 2-3 minutes.
- Add cabbage, carrots, beef broth, tomato sauce, rice, bay leaf and brown sugar to the pot. Season with salt and pepper to taste.
- Simmer and cook for 25 minutes or until the rice is cooked. Remove and dispose of bay paper. Sprinkle with parsley and serve.
