Strawberry Icebox Cake
Ingredients:
For the Strawberry Filling:
- 1 pound fresh strawberries, hulled and cut into bite-size pieces
- 1/4 cup granulated sugar
For the Whipped Cream:
- 2 cups heavy cream
- 1 tablespoon vanilla extract
- 2 cups powdered sugar
Additional Ingredients:
- 8-10 graham crackers
- 2 tablespoons vanilla pudding mix, unprepared
Instructions:
Preparing the Strawberry Filling:
- Prepping the Strawberries: Wash the strawberries under cold running water. Remove the green stems and hulls, then slice the strawberries into bite-size pieces.
- Sweetening the Strawberries: In a mixing bowl, combine the sliced strawberries with granulated sugar. Toss gently to coat the strawberries evenly with the sugar. Set aside to allow the strawberries to macerate and release their juices.
