Quick and Easy Mint Chocolate Chip Truffles

Instructions:

  1. In a mixing bowl, cream together the room temperature cream cheese, butter, and mint extract until smooth.
  2. Gradually beat in the powdered sugar until the mixture is smooth and well combined.
  3. Gently stir in the mini chocolate chips. Chill the filling in the refrigerator for at least 3 hours until it’s firm enough to handle.
  4. Roll the chilled mixture into 1-inch balls and place them on parchment paper. If the filling becomes too sticky to work with, refrigerate it for a little longer.
  5. Chill the rolled truffles for at least 3 hours until they are firm.
  6. In a double boiler or using the microwave in 10-second intervals, gently melt the dark chocolate over low heat until smooth.
  7. Dip each chilled truffle into the melted chocolate, ensuring it’s fully coated. Place the dipped truffles on parchment paper and allow them to cool completely.
  1. Store the mint chocolate chip truffles in the refrigerator. They can last up to a week when refrigerated or several weeks in the freezer.
