Hillbilly Hot Rolls

Hillbilly Hot Rolls

Makes approximately 40+ rolls (depending on size)

Ingredients:

  • 2 cups warm water (105 to 110°F)
  • 2 packages (4 1/2 teaspoons) dry yeast
  • 6 1/2 cups all-purpose white flour
  • 1 teaspoon salt
  • 1/2 cup melted shortening, oil, or butter
  • 1/2 cup white sugar
  • 2 eggs

Directions:

  1. Prepare the Yeast Mixture: In a mixing bowl, combine two packages of dry yeast with two cups of warm water. Allow it to sit until the yeast is dissolved and frothy.
  2. Mix the Base: To the yeast mixture, add one teaspoon of salt, two cups of flour, and half a cup of sugar. Using a mixer, blend these ingredients for about two minutes.
  3. Incorporate Eggs and Shortening: Melt the shortening (or use oil/butter) and add it to the mixture along with the eggs. Continue beating the mixture for an additional two minutes.
  1. Gradually Add Flour: Slowly incorporate 4 1/2 cups of flour into the mixture, ensuring it is well combined. The dough should come together and form a soft, slightly sticky consistency.
  2. Let the Dough Rise: Place the dough in a warm, draft-free area to rise until it doubles in size. This typically takes around 1 to 1 1/2 hours, depending on ambient temperature.
  3. Forming the Rolls: Once the dough has doubled in size, punch it down to release any air bubbles. Divide the dough into desired portions and shape them into rolls.
  4. Second Rise: Place the formed rolls on baking sheets lined with parchment paper, leaving some space between each roll. Allow them to rise again for about an hour until they visibly increase in size.
  5. Bake the Rolls: Preheat your oven to 350°F (175°C). Bake the risen rolls for approximately 25 to 30 minutes or until they turn golden brown on top.
  6. Finishing Touch: Once baked, remove the rolls from the oven and brush the tops with melted butter for added flavor and a shiny finish.

Tips for Perfect Hillbilly Hot Rolls:

  • Ensure the yeast used is fresh for optimal rising.
  • Choose a warm and draft-free spot for the dough to rise.
  • Experiment with different fats (shortening, oil, or butter) to alter the flavor profile of the rolls.

Enjoy your homemade Hillbilly Hot Rolls straight from the oven, serving them warm with butter or your preferred accompaniment!
