BAKED CHEESE BROCCOLI PATTIES

Step 1: Prep and Mix

  • Heat avocado oil in a small skillet and sauté the onion and garlic for approximately 7 minutes until they turn soft. Set aside to cool.
  • Blanch the fresh broccoli in boiling water for about 2 minutes, then chop it into small pieces. Transfer to a large bowl.

Step 2: Combine Ingredients

  • To the bowl of chopped broccoli, add breadcrumbs, lightly beaten eggs, Parmesan cheese, Cheddar cheese, sautéed onion and garlic. Season generously with salt and pepper. Mix until all ingredients are thoroughly combined.

Step 3: Form and Bake

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Shape the mixture into patties. Using a lid covered with plastic wrap helps achieve perfect patty shapes. Gently press the mixture into the lid, then flip the patty onto the prepared baking sheet.
  • Bake in the preheated oven for 15 minutes. Flip the patties and bake for an additional 10 minutes until golden brown.
