Zucchini Enchilada Roll Ups

Instructions:

  1. Prepare the Zucchini “Tortillas”:
  • Preheat your grill or grill pan to medium-high heat. Alternatively, you can use a broiler.
  • Brush both sides of the zucchini slices with olive oil and season with salt and pepper.
  • Grill the zucchini slices for 1-2 minutes per side until slightly tender with grill marks. Set aside.
  1. Make the Enchilada Filling:
  • In a large mixing bowl, combine shredded chicken, black beans, corn, bell peppers, red onion, 1 cup of shredded cheese, chili powder, cumin, garlic powder, salt, and pepper. Mix well.
  1. Assemble the Roll-Ups:
  • Preheat your oven to 350°F (175°C).
  • Pour 1/2 cup of enchilada sauce into the bottom of a baking dish and spread it evenly.
  • Place a grilled zucchini slice on a clean surface and spoon filling onto one end. Roll it up tightly and place seam-side down in the baking dish. Repeat with remaining zucchini and filling.
  1. Add the Enchilada Sauce:
  • Pour remaining enchilada sauce over the roll-ups. Optionally, drizzle sour cream or Greek yogurt on top.
  1. Bake:
  • Sprinkle remaining shredded cheese on top of the roll-ups.
  • Cover the baking dish with foil and bake for 20-25 minutes until heated through and cheese is melted.
  1. Garnish and Serve:
  • Remove foil and garnish roll-ups with cilantro, green onions, olives, tomatoes, and jalapeños if desired. Serve hot and enjoy!
