THICK AND FLUFFY BUTTERMILK PANCAKE RECIPE
INGREDIENTS
- 1½ cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 egg, beaten
- ¼ cup water
- ½ cup milk or buttermilk
- 1 tablespoon vegetable oil
PROCEDURE
- Mix the first 5 dry ingredients (flour, sugar, baking powder, baking soda, salt) in a bowl.
- In a separate bowl, mix the remaining wet ingredients (beaten egg, water,
- milk/buttermilk, vegetable oil).
- Pour the wet ingredients into the bowl of dry ingredients and mix just until combined. The batter may be lumpy. Do not over-mix.
- Heat a frying pan or griddle on medium heat.
- When the pan is hot, pour about ¼ cup of batter onto it.
- When bubbles start to form on the surface of the pancake, flip it to cook on the other side.
- Cook until both sides are golden brown and the pancake is done.
- Repeat with the remaining batter.
- Serve the pancakes with pancake syrup or maple syrup, fruits, and butter.
