THICK AND FLUFFY BUTTERMILK PANCAKE RECIPE

INGREDIENTS

  • 1½ cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 egg, beaten
  • ¼ cup water
  • ½ cup milk or buttermilk
  • 1 tablespoon vegetable oil

PROCEDURE

  1. Mix the first 5 dry ingredients (flour, sugar, baking powder, baking soda, salt) in a bowl.
  2. In a separate bowl, mix the remaining wet ingredients (beaten egg, water,
  1. milk/buttermilk, vegetable oil).
  2. Pour the wet ingredients into the bowl of dry ingredients and mix just until combined. The batter may be lumpy. Do not over-mix.
  3. Heat a frying pan or griddle on medium heat.
  4. When the pan is hot, pour about ¼ cup of batter onto it.
  5. When bubbles start to form on the surface of the pancake, flip it to cook on the other side.
  6. Cook until both sides are golden brown and the pancake is done.
  7. Repeat with the remaining batter.
  8. Serve the pancakes with pancake syrup or maple syrup, fruits, and butter.
